Banana Blueberry Maple Mini Muffins


I love making mini muffins! Great for a quick snack or breakfast on the run. I've been using coconut oil in almost ALL my baking lately but you can use butter if you like. I adapted this recipe from my Chocolate Chip Banana Mini Muffins which my family also loves!


Banana Blueberry Maple Mini Muffins

Ingredients:

Wet
1/2 cup coconut oil (virgin, cold-pressed) or butter,softened
1/2 cup sugar
1/2 cup Pure Maple Syrup
2 large eggs
3 large ripe bananas, mashed
3 tsp vanilla extract

Dry

1 cup all purpose flour
1 cup whole wheat flour
3tsp baking soda
plus
1 1/2 cups fresh or frozen blueberries 

Directions:
Cream together the coconut oil, sugar and maple syrup in a bowl. 
Beat in the eggs, mashed bananas, and vanilla. 
In a separate bowl, combine the flours and baking soda and add to the wet mixture 
until just combined. 
Stir in blueberries. 

Spray mini muffin tin or use paper mini muffin cups.
Fill each well with batter at least 3/4 full. 
Bake at 350 for about 12 minutes, depending on your oven.
Makes approximately 40 mini muffins.

If using regular sized muffin tin bake for approximately 15-20 minutes.

    1. I made them just like the recipe. Did 24 minis and 8 regular. Sent the minis to work with hubby and everyone loved them.

  3. I used to make mini muffins for my kids when they were small. They'd eat just a bout any kind of muffin as long as I put chocolate chips in it, so I added lots of different fruits and shredded vegetables to make them healthier. I might make these for my kids now that they're grown - they might even eat them without chocolate chips!

  7. I need to buy a mini muffin pan! I am going to make these tomorrow for sure, they look delicious. I love that they are healthy and I know for sure the kids are going to love them.Thanks for the recipe, these will be perfect for school lunches too.
