My new love of Oatmeal Raisin Cookies
I don't think I've ever made Oatmeal Raisin cookies before. My girls saw the big bags of raisins on our last trip to Costco and asked if we could buy some. I thought that would be a nice idea for a snack, maybe keep some in my purse when we are out and about. And of course, we'd need to make some cookies! I've been told all sorts of wonderful things about coconut oil lately so I've been trying to incorporate it into my cooking whenever possible. So whenever I bake, I replace the butter in the recipe with coconut oil. If you don't have any you can certainly use butter instead.
The cookie batter for this recipe I found to be somewhat dry and I worried how the cookies would turn out. To my delight, and relief, they were absolutely amazing! I can't stop eating them. They are crunchy, and chewy, and juicy from the raisins, all at once. The combination of texture is sooo good. Hope you give them a try. Preheat oven to 375 degrees F
Wet Ingredients
3/4 cup coconut oil (virgin, cold-pressed) or butter,softened
3/4 cup white sugar
3/4 cup light brown sugar, packed
2 eggs
1 tsp vanilla extract
Dry Ingredients
1 1/4 cups all-purpose flour
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp salt
2 3/4 cups rolled oats
1 cup raisins
In large bowl, cream together the coconut oil or butter,
white sugar, and brown sugar until smooth.
Beat in the eggs and vanilla.
In another bowl combine the flour, baking soda, cinnamon, and salt.
Gradually beat into butter mixture.
Stir in oats and raisins.
Grab spoonfuls and lightly form into balls in your hand and
place onto an ungreased cookie sheet.
Bake 8 to 10 minutes in the preheated oven, or until golden brown. (mine actually baked to perfection in 7 min.)
Allow to cool slightly and then transfer to a wire rack to cool completely.
Makes approximately 4-5 dozen cookies.

ReplyDeleteThey really are yummy. The coconut oil gives it a subtle coconut flavour that everyone really loves. I brought them to a few gathering over the last week or so and everyone is asking for the recipe!
