Chocolate Chip Banana Mini Muffins
with Whole Wheat Flour & Coconut Oil
1/2 cup coconut oil (virgin, cold-pressed) or butter,softened
1/2 cup sugar
1/2 cup brown sugar
2 large eggs
3 large ripe bananas, mashed
3 tsp vanilla extract
1 cup all purpose flour
1 cup whole wheat flour
3tsp baking soda
1 cup chocolate chips
you can add 1 cup of nuts as well if you like
Cream together the coconut oil and sugars in a bowl.
Beat in the eggs, mashed bananas, and vanilla.
In a separate bowl, combine the flours and baking soda and add to the wet mixture until just combined.
Stir in chocolate chips and nuts if using.
Spray mini muffin tin or use paper mini muffin cups.
Fill each well with batter about 3/4 full.
Bake at 350 for about 12 minutes, depending on your oven.
Makes approximately 40 mini muffins.
If using regular sized muffin tin bake for approximately 15-20 minutes.
