Strawberry Banana Pancakes! Add some spunk to your boring breakfast routine.


My kids love pancakes but sometimes it's nice to change it up a bit. I've added blueberries and chocolate chips to pancakes before but this time I thought strawberry banana would be fun. And what a surprise...the kids LOVED them!

Sometimes I make pancakes from scratch but I usually use the pancake mix that I buy from Costco. It makes the process so much faster. But I'll include the recipe for a pancake mix at the end of this post for you. 

I made a double batch of pancakes with the mix and added 1 banana, diced and about 6 - 8 partially defrosted frozen strawberries, diced. You can change up the amounts based on your own tastes. Mix it all together and cook in the pan as usual and voila! A super yummy breakfast with an added serving of fruit. Enjoy! 


Basic pancake recipe:

Combine dry ingredients
1 1/3 cups all purpose flour
2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt

Combine wet ingredients
1 egg
1 1/4 cups milk
2 Tbsp vegetable oil
1/4 tsp vanilla

Add wet ingredients to dry ingredients and stir. 
Cook pancakes in greased frying pan.
