Crock-Pot Pork tenderloin with rosemary roasted potatoes and carrots.

I made this pork tenderloin recipe last night for the first time and it was so yummy. My 4 year old took her first bite and said "Mommy! I like this recipe!" Looks like we have a winner. It's now added to the rotation. I'm really glad because I was really getting in a rut making the same dinners over and over.

For the tenderloin:

For our family of 4 I bought a package of 6 tenderloins from Costco. I used 2 for this meal and froze the others for future meals.
I used 1 500ml bottle of Diana's Gourmet Maple BBQ Sauce (There was LOTS of sauce)
1 small onion (minced)
2 -3 garlic cloves, or more if you are like me and LOVE garlic (minced) 
A couple dashes of hot sauce
salt and pepper

Salt and pepper the tenderloins and add to the crock-pot. Add the rest of the ingredients and stir to coat. Cook on low for 6-7 hours. (I was short on time and cooked mine on high for about 4 hours)

For the potatoes:

I kind of just throw these together so I don't have an exact recipe.

Peel enough potatoes to feed your family. Cut into 1- 1 1/2 in pieces. I parboil mine so they cook faster in the oven. Drain and put in a bowl. Drizzle some olive oil. Season with salt, garlic powder and rosemary. Add to a baking sheet and roast at 400 until done (about 30-50 minutes depending how long/if you boiled them) turning them halfway.

For the carrots:

Peel the carrots and cut diagonally into large chunks and boil until desired tenderness in water and brown sugar.

    1. Parboiling means to partially boil the potatoes. Enough to get them started so they take less time in the oven.

  6. This recipe sounds very good. I love blogs, like yours, that offer recipes...I find it is easy to get stuck in a rut of our own family traditionals and not branch out much. Then I read a recipe on a blog and think wow, that is something I've got to try. Plus, who doesn't love a crock pot meal!
