Super yummy Starlight Cake with Broiled Nut Topping (nuts optional)



Starlight Cake with Broiled Nut Topping 

I love this recipe because I always have the ingredients on hand and it's super easy to make. The topping is soooo good. I could eat the whole thing by myself!

 Preheat oven to 350° 
Grease and flour 13 x 9 pan  

For the cake:

 Mix together with spoon: 
 2 cups all purpose flour 
 1 ½ cups sugar 
 1 tsp salt 
 3 ½ tsp baking powder 

 Add all at once: 
 ½ cup softened margarine 
 1 cup milk 
 1 tsp vanilla 
 3 eggs 

 Mix with electric beaters on slow or medium for ½ minute 
Scrape bowl 
Mix again at high speed for 2 minutes, scraping once more. 

Bake 35-40 minutes 

 Broiled Nut Topping:  

1 cup brown sugar 
¼ cup margarine 
2 tbs milk 
1 cup chopped nuts (I used pecans here, walnuts are good too)

 Mix together and spread over warm cake
(I like to prick the cake all over with a fork so some of the topping can soak in) 
Place 5 inches from broiler for a minute or two  
Watch carefully – it burns easily

  19. This cake looks so yummilicious wow, I used to make a oatmeal cake that had a similar topping but called for coconut and was broiled. Made for a deliciously moist cake.

  22. Those are simple ingredients. I like that in recipes. Drives me nuts when I want to make something and I don't have that one ingredient it needs.
