Leftovers from taco night? Make it a salad for lunch!


We LOVE burrito/taco night. It's one of my favorite meals. While my hubby and 9 year old daughter only add cheese to their beef and bean burritos, myself and my 4 year old daughter love heaping on the veggies. When dinner is done I'm sad. But there's something to look forward too!

My lunch the next day is always a salad made from all the leftovers. 

Here's what's in it:
Lettuce
Onions
Green pepper
Reheated ground beef with taco seasoning
Cheddar cheese
Salsa

I just throw it all on a bowl and stir it up. Super yummy!

  1. I love making a salad of the toppings. It's sometimes better than the tacos! :)

    We often have more filling and toppings left than taco shells, but we always have tortilla chips around. We'll lay out a pile of chips on a plate and top with the taco stuff. You use the chips to scoop up the filling. Sloppy, but fun!

  10. That is such a great idea. My gram was a firm believer in nothing goes to waste. For example: When we bread chicken/pork-chops & she was done she would put the egg & breadcrumbs together and fry it up. My kids loved it. Thanks for sharing.

  13. This is a great idea! I don't usually get too creative with taco leftovers ... at best, I go from tacos to tostados! Lol! I will definitely need to do this next time. Thanks for the idea. :)

  20. Everyone in my family loves this . I personally prefer it better than tacos. Its easier to eat too. its is so much better then next day. Its made at all our parties.

  21. I am always looking for ways to present leftovers so that the kids will eat them. I think the thing that makes this a clever idea is that it does not look like a taco but it still tastes good to them. Thanks
